Chicken Parmesan Mac 'n' Cheese Recipe

​​Hey everyone! Here is one heck of a combo - a delicious chicken parmesan mac and cheese recipe to make for dinner tonight!

Mac and cheese has become a weekly tradition in my household and recently I decided to combine chicken parmesan with mac and cheese. ​This honestly was such a fun way to enjoy both mac and cheese and chicken parm. I cooked this in a relatively healthy way by baking the chicken in the oven. If you choose to, feel free to shallow fry or even deep fry the breaded chicken cutlets ​for delicious fried goodness. I feel like trying it now as I’m writing this actually! ​In the future I would also love to experiment with the toppings on the chicken by using ricotta or even sour cream. I hope you can use this base recipe to create delicious versions of your own! 



Serves: 2

Ingredients
  • 8 oz macaroni 
  • 8-12 oz chicken breast
  • 2 cups marinara sauce of choice (my recipe is here)
  • 50 g Panko breadcrumbs seasoned with salt and pepper 
  • 20 g all purpose flour
  • 1 beaten egg
  • 60 g mozzarella cheese
  • 30 g Parmesan cheese
Instructions
  1. Bring water to a boil for pasta and lightly salt it.
  2. Cook macaroni according to package instructions
  3. Flatten out chicken using either a meat tenderizer or placing it between two pieces of plastic wrap and flattening with a rolling pin
  4. Dredge chicken in flour, shake off excess and then dip in eggs, coat with panko breadcrumbs and press lightly.
  5. Heat oven at 425 and bake for 10 minutes or until golden brown and cooked.
  6. Combine cooked pasta with marinara sauce, reserving about 1/2 cup of sauce.
  7. Transfer pasta into casserole dish, layer with cooked chicken and evenly distribute the remaining sauce, mozzarella and Parmesan.
  8. Bake for 10 minutes or until golden brown.
