Introduction to Pizza Style Focaccia

Flatbreads? Pizza? You can decide what you think of it but I know for sure it is supremely delicious. Official known as Focacia have been such a time saver when I need to prep my dinner ahead in time before work. Super easy to prepare once you’ve worked hard to prepare your frozen flatbread portions. The possibilities are simply endless and I will let you find your own favourite toppings. What makes these so satisfying and different from pizza is that crust, unlike any pizza, crusty, and a perfect honeycomb dough structure if prepared properly. You can modify the flavour of the dough by using various flavoured oils. It’s amazing. 

So don’t get intimidated by the process of making the dough, it really pays off in a huge way. Gives you so many options and it is sure to be a crowd favourite. So what are you waiting for, skip reading this and get on cooking! 



Ingredients

  • 22.5 oz unbleached bread flour
  • 13 g salt
  • 5 g instant yeast
  • 1 oz olive oil
  • 17 oz water at room temperature

Instructions 
  1. Mix all the dry ingredients together and then add in the water. 
  2. Start mixing on low speed with dough hook until dough comes together, about 3 to 5 minutes
  3. Mix on medium speed for 3 to 5 minutes
  4. Create an oil slick on your countertop by dropping 1 tsp of olive oil and spread it around
  5. Lightly oil your hands and transfer the dough onto your oil slick. 
  6. Pat the dough into a rectangle, 6 by 12 inches. Let it rest for 5 minutes
  7. Stretch dough out until it is double its size. Fold onto itself and return back to a rectangle. Mist top with spray oil and loosely cover with plastic wrap. Let it rest for 30 minutes. 
  8. Repeat step 8 twice more.
  9. Lightly oil a baking sheet   inches and spread dough out and fill the entire area. Note: if dough feels springy and is resisting, let it rest for 15 minutes and try again
  10. Cover the sheet pan with plastic wrap and place in freezer. 
  11. Once the dough has frozen, take it out of the freezer an sort it rest until it’s soft enough to cut. Do not let it thaw out completely. 
  12. Cut into 4 halves and individually wrap them to use later for up to 3 months
