Besan Papada - Crispy Indian Pancake Made From Chickpea Flour

This is a popular favourite in North Indian homes, loved for its unique flavour given by the besan/gram/chickpea flour and a variety of Indian spices in addition to chillies and onions. This is a really simple preparation and goes really well with any Indian pickle or chutneys. I grew up loving this dish and I would love to hear what you guys think of this special breakfast pancake!

  • 240 grams gram flour or besan
  • 1 1/2 cups water
  • 1/2 tsp carom seeds
  • 1 tsp red chilli powder
  • 1/2 tsp ground coriander
  • 1 small chopped red onion
  • 1 tsp chopped ginger
  • 2-3 green chilies
  • 1/2 tsp salt
  • Optional: Pinch of turmeric 
  • Oil
  1. Mix all ingredients except the oil and water in a bowl. Using a whisk, add in the water and mix until you have a smooth, runny batter.
  2. Heat a pan on medium heat. Add in half a ladle of the batter. Sprinkle some oil over the top of the pancake and cook until the edges start to turn golden brown.
  3. Flip the pancake and cook for 1-2 minutes on the other side. 
  4. Fold the pancake into thirds and repeat steps 2-4 for the remaining batter. Serve hot with a pickle or hot sauce. Enjoy :)
