North Indian Poha - Ginger Spiced Potatoes and Peas with Fluffy Flattened Rice

Hey everyone, this is my take on the traditional North Indian poha. This is a popular breakfast dish that incorporates fresh ingredients such as ginger, cilantro, and lemon juice with sautéed potatoes, peas and aromatic Indian spices, finished with desi ghee. Hope you'll enjoy this recipe for your next Indian brunch!

  • 2 tbsp olive oil
  • cumin seeds
  • hing
  • 1/2 inch ginger finely chopped
  • 3 medium potatoes, cut in 1/2 inch cubes
  • 1/4 tsp ground turmeric 
  • 3 thinly sliced scallions
  • 1 cup peas
  • 1 1/4 cup poha/flattened rice
  • Salt
  • Pepper
  • juice of half a lime
  • 2 1/2 tbsp ghee
  • Cilantro for garnish
  1. Heat olive oil in a medium pan and when the oil is hot add the cumin seeds and hing, and cook until the cumin seeds become a reddish brown.
  2. Add the potatoes and the ginger and cook until the potatoes are crispy on each side, stirring occasionally. 
  3. In the meanwhile, wash the poha/flattened rice 5 to 6 times with cold running water. Then, drain the water and let it sit. 
  4. Once the potatoes become crispy, add in the scallions and cook until aromatic. 
  5. Add in the peas along with the salt and pepper. 
  6. The poha should have puffed up by now. Add it into the pan and mix well. Add in the ghee and lime juice, and taste and adjust for seasoning. 
  7. Garnish with some fresh cilantro for an extra kick. Serve hot with some buttered toast :)
