Homemade Juicy Chicken Shawarma Sandwich

  • 8 chicken thighs
  • 1/4 cup olive oil
  • juice of 1/2 lemon
  • pinch of cinnamon
  • 1/4 tsp turmeric
  • Red pepper flakes to taste
  • 4-5 garlic cloves
  • 2 tsp ground cumin
  • 2 tsp freshly ground pepper
  • Salt to taste
  • 1 1/2 cups chopped lettuce
  • 1/2 cup of sliced onions
  • 1/2 cup Greek yogurt sauce/garlic sauce
  • 4 pita breads

  1. Combine all the ingredients for the chicken marinade. Marinate the chicken for at least an hour. 
  2. Then, put it in the oven at 425 F and let the chicken cook through, about 35 minutes.
  3. Slice the chicken into strips. Optional: Then, cook the chicken on a grill pan or frying pan to let the chicken become crispy. 
  4. Tear the pita breads along the seam into two thinner pieces, and then lay them on a counter top with one half slightly overlapping the other. 
  5. Spread a tablespoon of the sauce along the centre. Add the lettuce, onions, chicken and any other toppings of your choice. 
  6. Start rolling from the bottom, ensuring the wrap is tight and complete the wrap. 
  7. Wrap the sandwich with two pieces of aluminum foil, making sure to seal at each end. Toss the sandwich in an oven at 425 F or grill pan for 1-2 minutes until warmed through. Enjoy hot :)
