Double Chocolate Cookies and Cream Pancakes

Hey everyone, are you looking for the most epic cookies and cream pancakes? Then you've found the right recipe! I decided to make it double chocolate by adding in sandwich cookies in the batter and cocoa powder and of course layer it with a white chocolate and cream topping to really replicate sandwich cookies, pancake style! The pancakes themselves are so fluffy and taste just like a brownie thanks to the double chocolatey goodness! When you have your next cookies and cream craving, this will be your go-top pancake recipe for sure!


Pancake batter:
  • 1/2 cup all purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup whole wheat flour
  • 1 cup milk 
  • 1 egg 
  • 2 tsp baking powder 
  • 4-5 sandwich cookies, separated (8-10 individual pieces) and discard the cream 
  • 40 grams white chocolate 
  • 1/2 cup cream

  1. Preheat oven to 200 F.
  2. Grind 4-5 sandwich cookies in a blender, reserving the other half for the topping. 
  3. In a bowl, combine the dry ingredients together along with the ground cookies and in another bowl combine the wet ingredients together. 
  4. Heat a pan on medium heat with some oil or butter.
  5. Pour 1/4 cup of your batter onto the pan. Cook for 2-3 minutes until you start getting big bubbles, then flip the pancake. Reduce the heat to medium-low and cook for 1-2 minutes. 
  6. Transfer your pancake onto a baking sheet and keep it warm in your oven. Repeat steps 5-6 for the remainder of your batter.
  7. To make the topping, heat a pot of water on medium heat. Put a bowl on it to create a bain marie. Add the white chocolate and slowly melt it. 
  8. Pour the cream in a bowl and whisk until you get soft peaks. 
  9. Once you have your whipped cream, take the melted chocolate and combine the whipped cream and mix until well combined. 
  10. Lay out one pancake and pour the chocolate cream topping on top. Repeat for all pancakes, and add additional pieces of sandwich cookies to finish. Serve hot and enjoy :)
