  • 2 chicken breasts, without tenderloin
  • 2 eggs
  • 6 oz pasta of choice
  • 2 cups marinara sauce, as shown here or store bought
  • 1 cup breadcrumbs
  • 1 cup flour
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp cayenne pepper (or to taste)
  • 1/4 tsp oregano
  • 1/4 cup vegetable oil
  • 1/2 cup parmesan
  • 4 thin slices mozzarella
  1. Preheat the oven 425 F.
  2. Pat the chicken breasts dry with paper towel. Then, butterfly the chicken breasts. Put the butterflied chicken breasts between two pieces of parchment paper and roll them out to make them thin.
  3. Put the flour, eggs, and breadcrumbs in separate plates. Season the breadcrumbs with salt, pepper, cayenne pepper, and oregano.
  4. Dredge the chicken in the flour, then in the eggs, and then in the breadcrumbs, ensuring to shake off the excess throughout.
  5. Bring water to a boil and cook the pasta as per package directions.
  6. Heat a pan on medium heat and add in the oil. Cook the chicken on one side until brown, 3-4 minutes. Then repeat on the other side.
  7. Coat the cooked chicken with a few spoonfuls of marinara sauce, reserving some for the pasta. Add the mozzarella and parmesan cheese and cook in the oven until the cheese is bubbly. After about five minutes, turn on the broiler.
  8. Drain the pasta and toss in the remaining marinara sauce.
  9. Take the chicken out of the oven and coat with additional parmesan cheese. Serve with the pasta and enjoy :)
