Spicy Black Bean Pita Sandwich | Fun Lunch Recipes | Quick & Easy

Hey everyone, are you looking for a wholesome yet quick lunch to put together? Then you need to try these delicious spicy black bean pita sandwiches I recently threw together! It was super satisfying! I threw the mix in with homemade pita bread but of course feel free to use whatever pita bread you like! The mix is super quick to make and full of flavours, you'll be sure to love this as a healthy and fast lunch option!



Serves: 1

Ingredients
  • 1/2 can black beans
  • 5-6 cherry tomatoes
  • 1/2 small onion
  • 1/8 tsp oregano 
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 clove garlic
  • 1/4 tsp cayenne pepper
  • 1 pita bread

Instructions
  1. Heat a pan on medium heat. Add in the oil and add in the onion and sautee until the onions are soft.
  2. Add in the tomatoes, salt, and cayenne pepper. Cook until the tomatoes start to get mushy. 
  3. Add in the beans and cook until everything is heated through.
  4. Cut the pita bread in half and fill it in with the bean and tomato mixture. Enjoy :)
