Oven Baked Salmon with Lemon and Herbs | Simple Dinner Recipe

Hey everyone, here is a delicious simple salmon recipe you're sure to enjoy! With a simple lemon and herb marinade and baked to perfection in the oven, this salmon is full of flavour. Serve it with a side of basmati rice and French green beans for a delicious dinner!

Ingredients

  • 8 oz salmon (2)
  • 4-5 tbsp olive oil
  • 1 tbsp lemon juice
  • 3-4 cloves garlic minced
  • 1 tbsp fresh parsley/1.5 tsp dried parsley
  • 1 tsp dried basil
  • 1/2 cup basmati rice
  • About 40 raw green beans
  • Salt and pepper to taste

Instructions
  1. For the salmon, combine olive oil, lemon juice, 3 garlic cloves, parsley, basil, salt and pepper in a large bowl and add salmon and coat with marinade. 
  2. Marinate up to 1 hour in fridge. 
  3. Heat oven to 375F
  4. Take a large aluminium foil and and nestle a filet of salmon down the centre. Start from each ends, bring up edges fold and create a seal or a boat.
  5. Bake in oven for 25-35 mins or until tender and flaky with a fork.
  6. Add rice with 1 cup of water to a saucepan and bring to boil. 
  7. Once rice comes to boil, put lid on and reduce heat to medium low. Cook until rice is tender.
  8. Bring a skillet to medium heat and add some olive oil, add beans, 1 clove garlic, salt and pepper and cook 5-10 mins until tender. 
  9. Serve hot!
