Earl Grey Pancakes with Sweet Cherries

Learn here how to add a simple tea and milk mix to your usual pancake batter for a subtle but tasty tea flavour to your usual pancakes. Pancake batter
  • 1/2 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1 Earl Grey teabag
  • 1 cup milk plus more as required 
  • 1 egg
  • 1/2 tsp cinnamon
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • 1 tbsp honey 
  • 20 dark sweet cherries
  • 4 tbsp Greek yogurt
  • 1/2 tsp vanilla
  • Honey to taste
  1. Preheat the oven to 200 F. 
  2. Heat a pot on medium heat and add in milk. Wait until the milk comes to a boil, then add in the teabag and let simmer. 
  3. Combine dry ingredients together, then add in the tea and milk mixture as well as the wet ingredients to create a smooth pancake batter.
  4. Heat a pan on medium heat with some oil or butter.
  5. Pour 1/4 cup of your batter onto the pan. 
  6. When bubbles start to appear and the underside has become golden brown, flip the pancake. Reduce the heat to medium-low and cook for 1-2 minutes. 
  7. Transfer your pancake onto a baking sheet and keep it warm in your oven. Repeat steps 3-6 for the remainder of your batter.
  8. To make the topping, crush about 15 cherries, reserving the rest to be served on top. Then, add in the Greek yogurt, vanilla and honey and mix well. 
  9. Lay out one pancake and pour some of the cherry and yogurt topping on top. Repeat for all pancakes, and add the remaining cherries on top. Serve hot and enjoy :)
