Healthy Lentil Salad | Quick Easy Lunch Recipes

This is recipe is a quick lentil salad. It's an easy lunch idea that is always a backup for me! It's convenient, easy to prepare, and healthy too! In this recipe, I share how to make the base recipe for the lentil salad, but feel free to add any other additional veggies or protein you would like! 

Cook time: 10 minutes
Serves: 2

  • 1 cup of grape tomato halves
  • 1 cup of sliced white onions
  • 1 cup of chopped zucchini
  • 1 can of green lentils
  • 1 tsp curry powder 
  • Salt and pepper to taste
  1. Heat pan on medium. Add in onions. Cook until onions start to change colour and become translucent, about 3-4 minutes. 
  2. Add in your zucchini, salt and pepper. Cook for about 2 minutes or until zucchini starts to become soft. 
  3. Add in curry powder. Stir for 30 seconds until fragrant.
  4. Add in tomatoes. After one minute, add in your can of lentils. Cook until everything is warm through. Finish with lime juice and cilantro or any other garnish you wish.
