Grilled Chicken Sandwich | Quick Easy Lunch Recipes

This is a basic sandwich recipe where I will be sharing how to make my quick homemade spicy mayo and a simple grilled chicken that can be paired with any veggies of your choice! This will make one sandwich.



For spicy mayo

Ingredients:
  • 1 heaping tablespoon of mayo 
  • 1-2 teaspoons of Sriracha (you can adjust to preference)
  • 1 teaspoon of lemon juice 
  • 1/4 teaspoon of salt and freshly ground pepper
  • 1 clove of minced garlic
  1.  Combine all the ingredients together in a bowl and mix well. 

For the grilled chicken

  • 2 chicken tenderloin 
  • Salt and pepper 
  • Oil
  1. Heat a pan on medium heat with some olive oil. 
  2. Season your chicken with salt and pepper on both sides. 
  3. Add your chicken in the pan. Cook for 2-3 minutes or until slightly browned then flip and cook on the other side for the same amount of time or until cooked. Cut into pieces.

For the sandwich

  1. Spread your homemade spicy mayo on both slices of bread. Add toppings of your choice and place the chicken on top of the veggies. Enjoy :)
