Egg White Omelette with Asparagus | Breakfast Recipes

This recipe is a simple egg white omelette with asparagus. This alternative to a traditional omelette can be used in place of whole eggs for more protein and less fat, and you get the balance of vegetables from the asparagus. Although I personally don't eat this omelette myself (I prefer the classic omelette recipe which you can find here), I am more than happy to learn and share how to make the perfect egg white omelette for those who need it!

  • 1 cup egg whites
  • 3-4 small asparagus spears 
  • 1-2 tbsp olive oil 
  • Salt and pepper to taste
  1. Cook the asparagus on the pan with some oil or by boiling it.
  2. Bring a pan on medium-low heat and add olive oil. 
  3. Whisk the egg whites and add in salt and pepper. Pour it onto your pan. Then put the lid on and check after 1-2 minutes. When you see the eggs are cooked, try to release the eggs from the pan using a spatula or by shaking the pan. 
  4. Add in the asparagus and fold the eggs around the asparagus. Serve hot and enjoy :)
