Cookies and Cream Pancakes | Breakfast Recipe

This recipe will show you how I make simple chocolate chip pancakes and pair them with a delicious cookies and cream glaze on top! While it seems simple it was so amazing and fluffy and ultimately delicious! While I used cookies and cream protein powder for the glaze feel free to use real Oreo crumbles as that would definitely make it cookies and creamy, and even put them in the batter!

Pancake batter:
  • 1/2 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 tsp cinnamon
  • 1 egg
  • 1 cup
  • 1 tbsp baking powder
  • 1 tsp vanilla
  • Chocolate chips
  • Cool Whip
  • Cinnamon
  • Milk as needed
  • 1 scoop Cookies and Cream protein powder
  • 1/4 cup softened cream cheese

For the glaze:
  1. Put the protein powder in a medium sized bowl and start adding milk and stirring until you get a thick but pourable consistency.
  2. Start mixing in cream cheese and add more milk if necessary to maintain the desired consistency.
  3. Set aside for later.

  1. Preheat an oven to 200 F.
    1. Heat a pan on medium heat with some oil or butter.
    2. Pour 1/4 cup of your batter onto the pan.
    3. Sprinkle the chocolate chips on your pancake.
    4. When bubbles start to appear and the underside has become golden brown, flip the pancake. Reduce the heat to medium-low and cook for 1-2 minutes.
    5. Transfer your pancake onto a baking sheet and keep it warm in your oven. Repeat steps 3-6 for the remainder of your batter.
    6. Lay out your pancakes on a plate and pour your glaze over the top and sprinkle some cinnamon and Cool Whip. Serve hot and enjoy :)
