Chicken Pesto w/ Oven Roasted Tomatoes & Sweet Potato Mash | Dinner Recipe

This recipe is a dinner that is sure to please. Here I will show how to make a simple basil pesto sauce used for cooking oven-baked chicken breasts. Also, I show how to make oven-roasted tomatoes and a sweet potato mash for the side components.

Serves: 2


  • 2 large tomatoes
  • 1-2 tbsp olive oil
  • Salt and pepper
  • 2-3 lightly crushed cloves of garlic
  1. Heat your oven to 400 F. Slice the tomatoes in four halves and lay them out on a baking sheet. 
  2. Drizzle some olive oil on top.
  3. Sprinkle garlic on the pan and season with salt and pepper. Place in the oven for 45 minutes to an hour. 



  • 1 cup tightly packed basil leaves
  • 1/4 cup extra virgin olive oil
  • 1.5 tablespoons pine nuts
  • 1 clove of garlic
  • 1/4 cup parmesan cheese
  • pinch of salt

  1. Add everything except the parmesan cheese into a food processor or blender. Blend into a smooth paste. Put it into a bowl, and add in the parmesan cheese. Mix the parmesan with your hand or a spoon. Taste and correct for salt as needed.


  • 2 chicken breasts
  1. Coat generously each side of the chicken with the pesto sauce. Place on an aluminum foil-lined baking sheet. Put it in the oven at 400 F and cook for 20-25 minutes or until cooked. 

Sweet Potato Mash 

  • 1 large sweet potato
  • 1/2 tsp dried thyme
  • 1 tbsp melted butter
  • Warm milk as needed
  • salt and pepper to taste
  1. Peel the potato and into 1 inch cubes.
  2. If using a mixer, put your potatoes into your mixing bowl. 
  3. Add in your butter and start adding milk until you get the consistency you like. 
  4. Add in your thyme and salt and pepper to taste. 
  5. If not using a mixer, put your potatoes in a pan and using a potato masher, mash to a smooth consistency and then add in the butter, warm milk, thyme and salt and pepper to taste.
